Gimme Some Tofu Goodness

Last thanksgiving I decided to go vegan for a whole month.

I was on this craze for whatever reason but I only lasted 14 days.

Being vegan is hard.

Harder than not eating gluten.

Do you know that there are so many foods you can’t eat if you are a vegan?

Like white sugar for example. You cannot eat it if you are a vegan. Do you know why?

Because they use ANIMAL BONES to make it white!!!

Animal bones.

Think about that the next time you want to bite into some overly processed, sugary item that doesn’t even deserve the name “food”. Animal bones.

Anyway I found this great recipe to satisfy my chocolate sweet tooth and I even wowed my whole family (who does not like tofu).

Yup. I said tofu. The main item in my dish called….

Silken Chocolate Tofu Pie

for this you need…

12 oz silken soft tofu

12 oz bag of vegan semi sweet chocolate (I don’t know if carob would work or not)

1/4 cup black coffee (if you’re not a coffee person, you can put almond milk or something to replace the liquid)

1-2 tablespoon vanilla

1 vegan friendly graham cracker crust (found at your local Outpost or co-op)

berries and whipped cream (vegan friendly if you want) to top it off

Now, what you need to do next is super easy. If you are not a good cook, its okay. This is really hard to mess up.

1. Melt chocolate chips in the microwave or on stove top. Blend tofu, chocolate chips, coffee, and vanilla in mixing bowl. It should be creamy but if it has a little texture, that’s fine (cause mine did).

2. Pour into graham cracker crust and chill 1-2 hours in the freezer. Don’t let it completely freeze.

3. Garnish with fresh raspberries and whipped cream when serving.

Serves: 8

You can add anything you want to the top. Make it minty or put slivered almonds on top. Or make a berry syrup and glaze it on top. Yummy.

The possibilities are endless.
