Caramel Apple Cheesecake

I am legitimately excited for the holidays.
Especially the baking.
If you own a pinterest account, I bet you have been searching for the right recipes for the days leading up to Christmas.
Its a time to experiment, gain weight, satisfy your sweet tooth, and empty your bank account.
Is it worth it? Baking and then stuffing your face with the yummy creation that looks nothing like the picture?
Of course.
I have found THE BEST Caramel Apple Cheesecake Bar recipe (thanks to the-girl-who-ate-everything.com).
Behold…..
Crust:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup (2 sticks) butter, softened
Cheesecake Filling:
3 (8-ounce) packages cream cheese, softened
3/4 cup sugar, plus 2 tablespoons, divided
3 large eggs
1 1/2 teaspoons vanilla extract
Apples:
3 Granny Smith apples, peeled, cored and finely chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened
Drizzle:
1/2 cup caramel topping for drizzling after baked
Instructions:
Preheat oven to 350 degrees F.
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9×13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture.

For the streusel topping:
In a small bowl, combine all ingredients. I like to really combine it by using my clean hands to thoroughly combine the butter into the mixture.

Sprinkle Streusel topping over apples. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy! Make 16 servings.

Cool Ranch Crackers

When I was younger, my grandmother threw tons of parties.

Christmas, Halloween, Easter, Columbus Day…you name it.

She was the queen at preparing, decorating, cooking, and of course…hosting.

Although she doesn’t throw as many parties, she still continues to cook the “party food”.

One of which include “Ranch Oyster Crackers”.

Now if you haven’t had these before, I suggest you get all the ingredients and make them….because you are missing out.

Ingredients:

1 (1 oz) package Ranch-style dressing mix

1/2 teaspoon dill

1/4 cup oil (vegetable or olive)

5 cups oyster crackers

Directions:

1. Preheat your oven to 250 degrees

2. In a large bowl, combine the dressing mix, dill, oil. Add crackers. Toss to coat. Spread evenly on baking sheet.

3. Bake for 15-20 minutes, stir after 10 minutes. Remove. Cool. Serve.

This snack is crunchy. Salty. And of course…tastes like ranch.

Winter Weight and Thanksgiving Pants

The “Winter Weight” is just around the corner.

That’s right, ladies.

But don’t start pulling out your thanksgiving pants like Joey (from the T.V. show, Friends).

In fact, you don’t have to gain a pound. And if you do…think of the quote from the movie “Eat, Pray, Love”….

“Let me ask you something…In all the years that you have undressed in front of a gentleman, has he ever asked you to leave? Has he ever walked out and left? No? It’s because he doesn’t care! He’s in a room with a naked girl – he’s just won the lottery! I am so tired of saying no. I’m tired of waking up in the morning and recalling every single thing I ate the day before, counting every calorie I consumed so I know just how much self loathing to take into the shower. I’m going for it. I have no interest in being obese, I’m just through with the guilt. So this is what I’m going to do: I’m going to finish this pizza, and then we are going to go watch the soccer game, and tomorrow we are going to go on a little date and buy ourselves some bigger jeans.”
So…ask me how you don’t have to gain any weight during the holidays?
The answer is quite simple.
1. Get a Pinterest account.
2. Find recipes for healthy holiday food.
3. Find exercise routines.
4. Make the recipes you pinned.
5. Actually do the workouts that you planned so well in your mind.
If you really don’t think that will work…here is another idea….
1. Get a Pinterest account.
2. Find recipes for yummy, unhealthy holiday food
3. Delete “Exercise” board.
4. Make the recipes you pinned.
5. Sample every food at is offered to you.
6. Buy a bigger pair of jeans.
