Summer Sweet Potato Fries

One of my favorite things about summer is the rainstorms.

That sweet smell, the pitter-patter sound, and how the birds chirp with delight right after the rain stops.

That is perfection, my friends.

I know most of you would prefer to lay in the sun and soak up some much needed rays (I even did that over the weekend). But how could anyone pass up a perfect rainstorm?

As for what to do when it rains, board games and cooking comes to my mind. Perhaps you could even make some Sweet Potato Fries, the best side dish in the world.

Here’s what you need..

  • Olive Oil, for tossing
  • 5 sweet potatoes, peeled and sliced into 1/4-inch long slices, then 1/4-wide inch strips, using a crinkle cut knife
  • Oil
  • 1 tablespoon salt and pepper
  • 1/2 teaspoon paprika


-Preheat oven to 450 degrees F.

-Line a sheet tray with parchment. In a large bowl toss sweet potatoes with just enough oil to coat. Sprinkle with seasoning. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes. Let cool 5 to 10 minutes before serving.

Serve with a main dish of salmon or have them as the main course. Serve a smoothie on the side (or a cup of tea) and enjoy that rain (or sunshine).
