Mardi Gras’ Banana Foster

“Mardi Gras. Because drinking hurricanes is better than running from them.”

Yes folks, today is Fat Tuesday. The day where everyone drinks, eats, and parties. Parades, beads, music, king cakes…all to celebrate the day before lent.

Unfortunatly, unless I am in New Orleans myself…I won’t be celebrating Mardi Gras to the full extent as some people are. No drinking or partying for me.

But I do like how many Mardi Gras recipes show up when you google search “recipes”. I found recipes for King Cake and Gumbo and Hush Puppies. But I thought that everyone and their mother would be sharing those recipes or making them…so I found a less common Mardi Gras dish.

Bananas Foster.

Bananas warmed in buttery rum sauce over vanilla ice cream. Yum.


1/4 cup butter

2/3 cup dark brown sugar

3 1/2 tablespoons rum (you can use the flavored fake stuff)

1 1/2 teaspoons vanilla extract

1/2 teaspoon ground cinnamon

3 bananas, peeled and sliced lengthwise and crosswise

1/4 cup coarsely chopped walnuts

1 pint vanilla ice cream


-In a large, deep skillet over medium heat, melt butter.  Stir in sugar, rum, vanilla and cinnamon.  When mixture begins to bubble, place bananas and walnuts in pan.  Cook until bananas are hot, 1 to 2 minutes.  Serve at once over vanilla ice cream.

*Easy, right?

So whatever your plans are for tonight, make sure to stay safe and try not to binge on all the delicious treats.
