Healthy, Kid-Approved Chicken

I’m not sure about you guys but I hate being sick.

I feel awful and I don’t have any energy to do the things I love, like writing.

But after my weeklong strepthroat adventure (more like nightmare), I finally got to do something I love more than writing…cooking.

I found this great and easy recipe for chicken breast, a protein that our family consumes a lot. The zesty, spicy, crunchy taste makes up for the 45 minute cooking time… plus it is 3 year old approved. Here’s how you make it…

Ingredients:

1 1/2 cup oats
1 tbsp paprika
1 tbsp chili powder
1 tsp salt
1/2 tsp garlic powder (or fresh, minced garlic)
1/2 tsp cumin
1/4 tsp pepper
6-8 thawed chicken breast
1/2 cup milk
1 egg
2 tbsp olive oil
Directions:
1. Pre-heat oven 375 degrees.
2. in medium bowl combine oats, paprika, chili, salt, garlic, cumin, and pepper.
3. In another bowl, whisk milk and egg together.
4. Lightly grease pan (9 by 13)
5. Dip chicken in milk, then coat with mix. Place in pan.
6. Drizzle oil over chicken
7. Bake uncovered for 45-50 minutes.
                   Serve right out of the oven. A spring salad or any other veggie would work great as a side.
*Note: Cut the breasts into strips, and you got yourself some chicken fingers…now no child will deny this yummy dinner.

It looks so unhealthy...but that is so not true.
