Recipe for The Best Mexican Dish…

Every day of the week, my family eats a specific kind of food. On Monday we eat some sort of chicken dish, Tuesday is pasta…Thursday is Chinese…Saturday is leftover day.

We usually eat the same recipe week after week, and although very good, we develop this dislike for the dish. So I constantly try to find new recipes that we can use….my mom takes the ingredients we have in the kitchen and tries to make a casserole (our least favorite dish of the week).

Anyway, last week I stayed with my grandparents and one of the dinners we had was amazing. Taco Pizza.

Wednesday is usually mexican night for us…we either have a cassorole of some sort (with cheese, beans, tomato, more beans) or we have plain old tacos.

Well let me tell you something…Taco Pizza is kicking our “Taco Cassrole” out the back door. It’s easy to make, easy to eat, kids love it, and it tastes like a taco. Yum.

If you still have your doubts (or if you really want to try it), here is the recipe….

1 can (11 oz) refrigerated thin pizza crust (or you can make your own)
1 lb lean (at least 80%) ground beef
1 package (1 oz) taco seasoning mix (try to find MSG-free)
1/4 cup water
1 can refried beans
1/4 cup sliced ripe olives, drained
2 cups shredded cheese (I used cheddar, but you can use the mexican blend if you prefer)
1 1/2 cups shredded lettuce
1 cup seeded chopped tomato
– Heat oven to 400°F.  Spray or grease 15×10-inch or larger dark or nonstick cookie sheet.  Unroll dough on cookie sheet; starting at center, press dough into 15×10-inch rectangle. Bake crust for 5-7 minutes or until partially cooked (take it out before it gets golden brown).
-In 10-inch skillet, cook beef, taco seasoning mix and water as directed on package. Spoon refried beans evenly on dough, add beef. Top with cheese.
– Bake 8 minutes or until crust is golden brown and cheese is melted. Top with remaining ingredients.

    LOL, the blog world is small, this is exactly what is on our menu for tonight with a few minor differences. We love the leftovers too!! Happy cooking!!
