Our family does not celebrate Halloween.
We know the history behind it and we don’t want to include ourselves in the so-called holiday.
However, we do celebrate my mother’s birthday. Yes, she was born on Halloween night.
So on sunday instead of trick-or-treating, we had a family birthday party for her. And out of all the food that we made, there was one that she loved the most. Homemade mac and cheese.
I have been making it since I was 13 years old and it has never failed at the dinner table. I didn’t take pictures of the whole process but that will not stop me from sharing the recipe with you.
Items your going to need…
4 cups uncooked elbow macaroni
4 tablespoons butter
- 1/2 cup flour (I’ve only used white so I don’t know if whole wheat changes anything)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon ground mustard
- 1/2 teaspoon Worcestershire sauce
- 4 cups of milk (the thicker the milk, the thicker the sauce)
- 3 cups shredded sharp cheddar cheese (plus extra for top)
- How to make it….
- Heat the oven to 350ºF
- Cook the noodles.
- While macaroni is cooking, melt butter in 3-quart saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. Cook over medium low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
- Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. When you first start stirring it, the mixture should be thin and milky and by the time it boils it should have a consistency and color of really thick condensed milk.
- Stir in cheese. Cook, stirring occasionally, until cheese is melted.
- Drain macaroni and put noodles in casserole dish. Pour cheese sauce on noodles and stir until noodles are covered. Sprinkle cheese on top. Bake uncovered 20 to 25 minutes or until bubbly.
- Now I have made this many different ways and some good ideas include…
- -put italian bread crumbs on top to give it an extra kick
- -use a mix of cheeses instead of just one
- -add some veggies
- One thing that I recommend you not doing is…using mexican flavor cheese (or putting in spices that belong in chili). The mustard and worcestire sauce do not mix with it. You will probably have disastrous results.
- after making it, you get an idea as to why my mom loves this recipe…even when she is _ _ years old. (I don’t think she would appreciate it if I told the whole world her age).
